These crowd-pleasing Salmon Tacos with Spicy Cabbage Slaw are not only a breeze to make, but also pack a punch of vibrant flavours.

For the Salmon:

  • 4 salmon fillets, skinless
  • 2 tablespoons olive oil
  • 1 teaspoon ground cumin
  • 1 teaspoon smoked paprika
  • Salt and black pepper to taste
  • Juice of 1 lime

For the Spicy Cabbage Slaw:

  • 2 cups shredded green cabbage
  • 1 cup shredded purple cabbage
  • 1 carrot, thinly sliced
  • 1/2 cup chopped fresh coriander
  • 1 jalapeño, thinly sliced
  • 2 tablespoons mayonnaise
  • 1 tablespoon Greek yogurt (optional)
  • 1 tablespoon sriracha sauce (adjust to taste)
  • 1 tablespoon honey
  • Juice of 1 lime
  • Salt & black pepper to taste

For the Tacos:

  • 8 small corn or flour tortillas
  • Avocado slices for topping
  • Lime wedges for serving

Salmon:

  1. Preheat the oven to 200°C.
  2. In a small bowl, combine olive oil, ground cumin, smoked paprika, salt, black pepper, and lime juice.
  3. Place the salmon fillets on a baking sheet lined with parchment paper. Brush the fillets with the spice mixture, ensuring they are evenly coated.
  4. Bake in the preheated oven for 10-12 minutes or until the salmon is cooked through and flakes easily with a fork.
  5. Remove from the oven and let it rest for a couple of minutes. Flake the salmon into bite-sized pieces.

Spicy Cabbage Slaw:

  1. In a large bowl, combine shredded green cabbage, shredded purple cabbage, julienned carrot, chopped cilantro, and thinly sliced jalapeño.
  2. In a separate small bowl, whisk together mayonnaise, Greek yogurt (if using), sriracha sauce, honey, lime juice, salt, and black pepper.
  3. Pour the dressing over the cabbage mixture and toss until everything is well coated.

Assembling Tacos:

  1. Warm the tortillas according to package instructions.
  2. Spoon the flaked salmon onto each tortilla.
  3. Top with a generous portion of the spicy cabbage slaw.
  4. Garnish with avocado slices and a squeeze of fresh lime juice.
  5. Serve the salmon tacos immediately and enjoy the burst of flavours.
