Make: Great Aussie Lamb Burger

These Aussie Lamb Burgers with Goat's Cheese & Caramelized Onion are juicy, delicious, and just a little bit fancy. Cheers to a true-blue burger delight.

  • 500g ground Australian lamb
  • 1 small red onion, finely chopped
  • 2 cloves garlic, minced
  • 1 teaspoon dried rosemary
  • rocket, to garnish
  • Salt & black pepper to taste
  • 4 burger buns
  • 100g goat cheese, crumbled
  • 2 tablespoons olive oil

For Caramelised Onion:

  • 2 large red onions, thinly sliced
  • 2 tablespoons olive oil
  • 2 tablespoons balsamic vinegar
  • 1 tablespoon brown sugar
  • Salt to taste

For Red Wine Reduction:

  • 1 cup red wine
  • 2 tablespoons balsamic vinegar
  • 1 tablespoon honey
  1. In a large bowl, combine the ground lamb, finely chopped red onion, minced garlic, dried rosemary, salt, and black pepper.
  2. Divide the mixture into 4 equal portions and shape them into burger patties.
  3. In a pan over medium heat, sauté the thinly sliced red onions in olive oil until they become soft and translucent.
  4. Add balsamic vinegar, brown sugar, and a pinch of salt.
  5. Continue cooking until the onions caramelise and turn a rich, golden brown. Set aside.
  6. Preheat the grill or a grill pan over medium-high heat.
  7. Brush the lamb patties with olive oil and grill for about 4-5 minutes on each side.
  8. For the reduction: Meanwhile, in a small saucepan combine red wine, balsamic vinegar, and honey.
  9. Bring the mixture to a simmer over medium heat.
  10. Let it simmer until the liquid reduces by half, creating a thick, glossy sauce.
  11. To assemble your burgers, toast the burger buns on the grill or in a toaster.
  12. Place a handful of fresh rocket on the bottom half of each bun, topped with a grilled lamb patty.
  13. Top with crumbled goat cheese and a generous spoonful of caramelized onions.
  14. Drizzle the red wine reduction over the toppings.
