Dive into this easy-breezy baked Barramundi recipe — a celebration of tender fillets seasoned and baked to perfection, with a splash of a zesty lemon herb drizzle.
- 4 Barramundi fillets
- Salt & black pepper to taste
- 2 tablespoons olive oil
- 3 tablespoons unsalted butter, melted
- 2 garlic cloves, minced
- 1 tablespoon fresh lemon juice
- 1 teaspoon lemon zest
- 1 tablespoon fresh parsley, finely chopped
- 1 tablespoon fresh dill, finely chopped
- 1 teaspoon dried thyme
- Preheat the oven to 200°C .
- Pat the barramundi fillets dry with a paper towel. Season both sides with salt and black pepper.
- Place the fillets on a baking sheet lined with parchment paper.
- In a small bowl combine olive oil, melted butter, minced garlic, lemon juice, lemon zest, chopped parsley, chopped dill, and dried thyme.
- Brush the barramundi fillets generously with the herb butter mixture, ensuring they are well coated.
- Bake in the preheated oven for 15-20 minutes or until the barramundi is cooked through and flakes easily with a fork.
- If desired, finish under the grill for an extra minute to achieve a golden crust on top.
- Serve the barramundi hot, drizzled with any remaining herb butter sauce. Pair it with a chilled glass of Pinot Gris or Sauvignon Blanc.
