Dive into this easy-breezy baked Barramundi recipe — a celebration of tender fillets seasoned and baked to perfection, with a splash of a zesty lemon herb drizzle.

  • 4 Barramundi fillets
  • Salt & black pepper to taste
  • 2 tablespoons olive oil
  • 3 tablespoons unsalted butter, melted
  • 2 garlic cloves, minced
  • 1 tablespoon fresh lemon juice
  • 1 teaspoon lemon zest
  • 1 tablespoon fresh parsley, finely chopped
  • 1 tablespoon fresh dill, finely chopped
  • 1 teaspoon dried thyme
  1. Preheat the oven to 200°C .
  2. Pat the barramundi fillets dry with a paper towel. Season both sides with salt and black pepper.
  3. Place the fillets on a baking sheet lined with parchment paper.
  4. In a small bowl combine olive oil, melted butter, minced garlic, lemon juice, lemon zest, chopped parsley, chopped dill, and dried thyme.
  5. Brush the barramundi fillets generously with the herb butter mixture, ensuring they are well coated.
  6. Bake in the preheated oven for 15-20 minutes or until the barramundi is cooked through and flakes easily with a fork.
  7. If desired, finish under the grill for an extra minute to achieve a golden crust on top.
  8. Serve the barramundi hot, drizzled with any remaining herb butter sauce. Pair it with a chilled glass of Pinot Gris or Sauvignon Blanc.
