Make: Grilled Prawns with Mango Salsa

Prawns with Mango Salsa

This tasty grilled prawn recipe captures the essence of hot Aussie summers in every bite. Best enjoyed on the back deck with a bottle of bubbles or chilled white (we like Chardonnay or Fiano) and a table of friends.

For Grilled Prawns:

  • 500g large green prawns, peeled and de-veined
  • 2 tablespoons olive oil
  • 2 cloves garlic, minced
  • 1 teaspoon smoked paprika
  • 1 teaspoon dried oregano
  • Salt and black pepper to taste
  • Lemon wedges for serving

For Mango Salsa:

  • 2 ripe mangoes, diced
  • 1 red onion, finely chopped
  • 1 cucumber, diced
  • 1 jalapeño, finely chopped (seeds removed for less heat)
  • 1/4 cup fresh coriander, chopped
  • Juice of 2 limes
  • Salt and pepper to taste

Prepare the Prawns:

  1. In a bowl, combine olive oil, minced garlic, smoked paprika, lemon zest, salt, and pepper.
  2. Add prawns to the marinade, ensuring they are well-coated.
  3. Let the prawns marinate for at least 10 minutes; preheat your grill to medium-high heat.
  4. Thread the marinated prawns onto skewers.
  5. Grill prawns for 2-3 minutes per side or until they are opaque and have grill marks. Remove from the grill and set aside.

Prepare the Mango Salsa:

  1. Combine diced mangoes, red onion, cucumber, jalapeño, coriander, lime juice, salt & pepper in a bowl. Mix well and adjust the seasoning to taste.
  2. Arrange grilled prawns on a serving platter, spooning the fresh mango salsa over the prawns.
  3. Garnish with extra coriander and serve with lemon wedges on the side!

Hot Tips:

Soak wooden skewers in water for about 30 minutes before threading the prawns to prevent them from burning on the grill. Adjust the spiciness of the salsa by adding more or less jalapeño, according to your preference. Serve the grilled prawns with your favourite side dishes, such as a green salad or crusty bread.
