Elevate your seafood game and kick off the season in style, with a trio of wine-infused oysters made perfect for the start of summer.

The crisp acidity of sparkling wine is the unsung hero here, balancing out the richness of the oysters in a culinary yin and yang. To serve, set the table with crisp white linen, colourful plates, and plenty of lemons pinched from your neighbour's tree. Dress your oysters according to the flavour bombs below, and we bet you'll be fighting off hands before you can even say "pass the wine, please!"

Ingredients for Sparkling Dressing:

  • 1/2 cup Sparkling wine (Pirie Sparkling NV)
  • 2 tablespoons finely chopped shallots
  • 1 tablespoon chopped fresh chives


  1. Mix the wine, shallots, and chives in a bowl
  2. Spoon a small amount of the dressing over each oyster
  3. Add a squeeze of lemon, a dash of sea salt, and a pinch of black pepper
  4. Pour the opened bottle of wine into glasses, and enjoy!
