- 2 tablespoons olive oil
- 3 cloves garlic, minced
- 1 teaspoon ground cumin
- 1 teaspoon smoked paprika
- 1 teaspoon dried oregano
- Salt and pepper to taste
- Wooden skewers, soaked in water for at least 30 minutes
For Chat Potatoes:
- 500g baby chat potatoes, halved
- 2 tablespoons olive oil
- 1 teaspoon dried rosemary
- 1 teaspoon garlic powder
- Salt and black pepper to taste
For Yogurt Sauce:
- 1 cup Greek yogurt
- 1 tablespoon fresh mint, chopped
- 1 tablespoon fresh parsley, chopped
- 1 tablespoon lemon juice
- Salt and black pepper to taste
Lamb Skewers:
- In a bowl, combine olive oil, minced garlic, cumin, smoked paprika, dried oregano, salt, and black pepper.
- Add the lamb cubes to the marinade, ensuring they are evenly coated. Let it marinate for at least 30 minutes, or for better results, refrigerate for a few hours.
- Preheat the grill or grill pan over medium-high heat.
- Thread the marinated lamb cubes onto the soaked skewers.
- Grill the lamb skewers for about 8-10 minutes, turning occasionally, until they are cooked and have a nice char on the outside.
Chat Potatoes:
- Preheat the oven to 200°C.
- In a bowl, toss the halved chat potatoes with olive oil, dried rosemary, garlic powder, salt, and black pepper until well coated.
- Spread the potatoes on a baking sheet in a single layer.
- Roast in the preheated oven for 25-30 minutes or until the potatoes are golden brown and crispy on the edges.
Yogurt Sauce:
- In a small bowl, mix together Greek yogurt, chopped mint, chopped parsley, lemon juice, salt, and black pepper.
- Adjust the seasoning according to your taste.
Serve:
- Arrange the grilled lamb skewers on a serving platter alongside the roasted chat potatoes.
- Drizzle the yogurt sauce over the lamb skewers or serve it on the side as a dipping sauce.
- Garnish with additional fresh herbs for a burst of color and freshness.
