Duck fat roasted potatoes
Photographer and food stylist Ironchef Shellie has shared her recipe for perfect roast potatoes. Her secret is using duck fat to roast them. Enjoy these with your mid-Winter feast and Brown Brothers wines.

- Preheat oven to 200ºC (180ºC fanforced). Place peeled and cut potatoes into a saucepan and fill with plenty of cold salted water. Bring to the boil and allow to simmer until tender.
- Drain potatoes, and place back into saucepan and add duck fat. Stir through the duck fat,
until it has coated all the potatoes.
- Place potatoes in a roasting tray in a single layer and roast for approximately 30 minutes, or
until golden and super crunchy.
