Incredibly deep colour
On the nose it is bursting with blackberry and chocolate aromas.
The palate is soft and juicy with lots of ripe berry fruits.
The grapes for this wine were grown entirely at our Mystic Park Vineyard just out of Swan Hill.
After picking, the grapes were fermented in contact with the skins for 7 days in the experimental Kindergarten winery. The wine was kept in stainless steel tanks to ensure the fruit flavours follow through to the bottle. It finished with an alcohol content of 12%, a pH of 3.7 and an acid level of 5.3.
Recommended food pairings:
Mystique is the perfect wine to have with pecorino crumbed lamb cutlets and a mint dipping sauce. It is also very good with a wide range of Indian curry. Try Rogan josh or tikka masala. Don't be scared to chill the Mystique down on ice and enjoy it at the summer BBQ with kransky sausages or grilled eggplant.
