At latitude 42 degre south and moderated by a cool maritime climate, our vineyards are perfecly suited to growing this richly flavoured Sauvignon Blanc.
The Art – Aromatic gooseberry fruit balanced by a textutal palate.
The Science – 20% fermented in seasoned French oak for complexity.
Recommended food pairings: The 2021 Sauvignon Blanc has the weight of flavour and complexity to make it a versatile food wine. Ideal with seafood dishes like whiting fillets and oysters and also perfect with steamed asparagus drizzled in olive oil and fresh chevre topped with crispy pancetta.
Growing Conditions: Sauvignon Blanc from the Tamar Valley in the north of Tasmania. The 2021 vintage saw a cool growing season leading to crisp refreshing whites. The viticulture team did an incredible job at producing low yields of immense flavour.
Winemaking notes: The juice was run off skins immediately after going to the press. It was then cold settled to remove solids. A small percentage was kept on full solids for 10 days to add palate weight. The wine was then fermented in mainly older oak puncheons to give greater complexity. Five percent was fermented in new barrels. Vegan-friendly.
