Characterised by its racy acidity and intense citrus notes, this Tamar Ridge Riesling truly makes an age-worthy Riesling.
Capturing the crisp delicate flavours of its cool-climate origins of the West Tamar region in Tasmania, it nicely complements fresh tiger prawns with honey chilli dipping sauce.
Recommended food pairings: Serve with seafood such as prawns, scallops or delicate white fish and Asian inspired dishes filled with lots of fragrant lemongrass and coriander.
Growing Conditions: Estate-grown Riesling fruit from our vineyards in the Tamar Valley of Tasmania. The 2017 vintage was excellent across the board and especially for white varietals.
Winemaker: Tom Wallace
Winemaking notes: The fruit was predominately hand-picked and whole-bunch pressed with juice then immediately run-off skins. The clear, racked juice was inoculated with a selected aromatic yeast strain. Ferment was cool, slow and controlled to maximise retention of fruit flavours. It was bottled with an alcohol of 12.5% a TA of 7.6 and a pH of 3.17.
