The fruit was sourced and handpicked from some of the highest quality vineyards in the King Valley that deliver natural acidity and delicate flavour.

Extended aging on lees has allowed this traditional method sparkling to develop a fine bead and complex characteristics, delivering delicate creamy flavours with an incredibly clean finish.

Vineyard Region: The fruit for the Patricia Pinot Noir & Chardonnay Brut is grown on the high altitude Whitlands plateau. The climate is extremely cool at 800m above sea level in the upper reaches of the King Valley.
Wine Analysis: Alc/Vol: 12.5%
Colour: A clean bright colour with a fine persistent bead.
Aroma: The nose is lifted with green apple, lemon zest and the early morning aromas of freshly baked goods.
Palate: The palate is full bodied and complex with prominent lemon and lime flavours and a bready nuance that lingers. It is creamy and elegant with a crisp, dry finish and refreshing acidity.
Peak Drinking: Enjoy this wine over the next 3 to 4 years.

Recommended food pairings: This refined sparkling wine makes the perfect start to a special meal and is delightful with sushi and sashimi. Alternatively, try it with steamed lemon infused chicken breast and Asian greens. If the timing is right don’t forget about lobster or crab!

Growing Conditions: The 2015 vintage is a blend of 77% Pinot Noir and 23% Chardonnay. The fruit was hand picked in March and whole bunch pressed.

Winemaker: Cate Looney

Winemaking notes: The grapes are gently handled to yield 500 litres of juice per tonne (compared with 650-700 per tonne for table wines) to minimise the impact of the colour and harsher compounds from the grape skins. The secondary fermentation was deliberately extended to produce a fine bead, then given 5 and a half years on lees to provide further complexity. The wine was then disgorged and liqueured, with an alcohol of 12.5%. This wine was made in strict adherence to the ‘Traditional Method’.

Critics’ tasting notes

  1. “Another exquisitely presented sparkling wine under this label. It’s had extended time on lees to develop those engaging autolysis characters so essential for the best sparkling wines.”
