Depth and elegance combine here in an alluring style that is a signature of great Victorian Cabernet. It has strong colour and tannin development with lifted varietal notes of blackcurrant and spice.
Cellared correctly, this wine will mature nicely in the bottle over the next ten years.
Recommended food pairings: This concentrated red wine would make a great partner to soy marinated wagyu beef on ginger broccolini and potato gratin. It could also be enjoyed with a selection of aged cheddar cheese at the end of a meal.
Growing Conditions: The fruit was harvested in March 2015 with a range of picking baumes.
Winemaker: Cate Looney
Winemaking notes: The wine was destemmed and crushed to open top fermenters in the Kindergarten Winery. The wine spent 20 months in 48% new and the balance older French oak barriques. A number of blending trials took place to produce a very intense and powerful wine from a low yielding vines.
“Deep, dark red/purple hue, with a ripe sweet berry and mint bouquet. The wine is again bright, refreshing and lively in the mouth, with acidity adding zest to the fruit freshness to the concentrated flavour. Liberal tannin adds structure, grip and authority. It’s a big wine but light on its feet. A very smart cabernet indeed. “

“A blend of grapes from Wrattonbully, Bendigo, King Valley and Great Western. Dense, concentrated Cabernet Sauvignon with classic blackcurrant, cassis, cedar, spice, anise, wood-smoke and spicy oak flavours. Approachable now but with long-term cellaring prospects.”

“A deeply concentrated, multi-layered wine with plush blackberry and chocolate notes. Delicious background savouriness and faint thread of thyme. A richly-flavoured, complex Shiraz with excellent depth and concentration. Impressive fruit integrity.”
