This limited release Shiraz is a multi-vineyard blend from mostly cool-climate sites throughout Victoria.
This wine has fantastic aromas of dark berry and plums with classic pepper notes. The acidity provides real liveliness and the tannins are fine-grained and well integrated. This wine will gain complexity with age, try it in the cellar for 6 to 8 years from vintage.
Recommended food pairings: This wine would work beautifully with pan-fried pepper crumbed venison fillet served with red wine jus and Mediterranean vegetables. Or try it with medium rear duck breast on steamed bok choy. For cheese, an aged pecorino would be perfect.
Growing Conditions: The grapes for this wine were grown at Henty, Heathcote, King Valley and the Pyrenees. The fruit was harvested from early March to late April at a range of baumé levels from 13 to 14.5.

Winemaking notes: This wine was matured in French and American oak barrels for 18 month, of which 35% were new. The wine was bottled with an alcohol of 14.5%, a pH of 3.4 and an acid level of 6.1 g/L.
