This crisp and zesty Chardonnay from our East Coast Hazard vineyard, is a perfect representation of the Tasmanian cool climate terroir.
Recommended food pairings: Try it with Tasmanian smoked salmon topped with light creamy mayonnaise and capers. It is also very good with ripe camembert and apple segments.
Growing Conditions: The 2018 vintage was excellent across the board and especially for white varietals. Crafted from 100% Chardonnay predominantly off our estate vineyard on the East Coast of Tasmania. Chardonnay favours cool climate growing conditions due to a long ripening season which helps retain high levels of natural acidity.
Winemaker: Tom Wallace
Winemaking notes: Juice was run off skins immediately after pressing and then cold-settled. Some parcels were not settled to leave some solid elements in the fermenting wine. The wine was fermented at cool temperatures in its tank and a small amount of oak influence helping to build texture to the palate. The wine was bottled with an alcohol of 13.0% a T.A. of 6.6 g/l and a pH of 3.34.
