Generously flavoured, this fresh and lively sparkling Shiraz has distinctive rich-berry flavours with silky tannins.
This fruity full-bodied wine is perfectly paired with a traditional slow-cooked roast lamb with a side of seasonal roast vegetables.
Recommended food pairings: This wine is perfect with a marinated roasted duck breast salad with rhubarb and fresh rocket. Sparkling Shiraz is also enjoyed around the Christmas period and is a real hit when served with roast meats and cranberry sauce.
Growing Conditions: The Shiraz grapes used to make this wine were grown at our Heathcote vineyard in Central Victoria. The fruit was harvested in February and spent 12 months in old American oak before being bottled for its second fermentation.
Winemaker: Geoff Alexander
Winemaking notes: Following this fermentation, it spent 12 months resting on lees (dead yeast cells) to add further complexity. It was then disgorged, liqueured and recorked, all these processes taking place in the original bottle – i.e. traditional method. It has an alcohol of 13.5%, a pH of 3.56, and an acid level of 6.0 g/L.
