The 2016 Cabernet’s depth of colour and intensity of flavour show tremendous concentration and it will cellar for up to seven years from vintage.
Recommended food pairings: This elegant red wine makes a delicious partner to a wide variety of meat dishes. It would make a perfect partner to rare herb encrusted eye fillet of beef with roasted vegetables, or with aged cheddar or Parmesan cheese at the end of a meal.
Growing Conditions: The 2016 Cabernet Sauvignon was sourced from a number of sites throughout Victoria including our Heathcote and Banksdale vineyards. It was harvested in parcels from early to late March at a range of baumé levels from 13.9 to 14.2.
Winemaker: Geoff Alexander
Winemaking notes: Different parcels of the wine spent 12 months in French oak barriques of which 5% was new. It was bottled with an alcohol of 14.5%, a pH of 3.49 and an acid level of 6.1g/L.
