Sparkling red wines are made in numerous wine producing areas around the world. Most winemakers choose to make these wines from Pinot Noir. No other country in the world makes sparkling wines from Shiraz grapes. Nor do they make sparkling wines as richly flavoured and full-bodied as Australian Sparkling Shiraz.
Recommended food pairings: This wine is perfect with a marinated roasted duck breast salad with rhubarb and fresh rocket. Sparkling Shiraz is also enjoyed around the Christmas period and is a real hit when served with roast meats and cranberry sauce.
Growing Conditions: The shiraz grapes used to make this wine were grown at our Heathcote vineyard in Central Victoria. The fruit was harvested in early March and spent 12 months in old American oak before being bottled for its second fermentation.
Winemaker: Geoff Alexander
Winemaking notes: Following this fermentation, it spent 12 months resting on lees (dead yeast cells) to add further complexity. It was then disgorged, liqueured and recorked, all these processes taking place in the original bottle – i.e. traditional method. It has an alcohol of 13.5%, a pH of 3.58, and an acid level of 6.0 g/L.
