The Vintage Release Prosecco is only available at Cellar Door, restaurants and fine wine outlets. Prosecco is the name of an appellation in north-east Italy as well as being the name of a grape variety. Sparkling Prosecco is made using the Metodo Italiano or Charmat method of production which is done via a pressured tank to retain the bubbles. The grapes are generally harvested early to get high levels of natural acidity and fresh crisp flavours. The wine is enjoyed widely throughout its home country but is not commonly made outside of Italy. The best examples come from the cooler regions and hence we have planted Prosecco at our Banksdale vineyard located in the upper King Valley.

Vineyard Region: King Valley
Wine Analysis: Alc/Vol: 11.5%
Colour: The colour is bright and vibrant with a youthful green hue.
Aroma: The nose shows lifted granny smith apple and pear notes along with a citrus undertone.
Palate: The wine’s tight natural acidity from the cool climate fruit make it perfect for drinking young while at its light and delicate best.
Peak Drinking: Until 2019

Recommended food pairings: The 2017 Vintage Prosecco is so fresh and crisp that it is a great drink on its own to kick off an evening. Try Prosecco with oysters and prawns or a lightly battered piece of whiting.

Growing Conditions: These grapes are selected from the best parcels of fruit from our Banksdale vineyard, which is perched on a ridge at 485m above sea level. The fruit was harvested in early April at a baumé level of approximately 10.

Winemaker: Geoff Alexander

Winemaking notes: After primary fermentation the wine was then fermented in a pressure tank to 5 atmospheres of pressure and bottled to retain the bubbles. The Prosecco was bottled with an alcohol of 11.5%, a pH of 3.18 and an acid level of 5.5g/L.
