Smells Like: A bright, fresh red blend with bright and fresh strawberry, juicy plums and savoury Chinese five-spice.

Tastes Like: A juicy palate of velvety dark fruits, herbal notes and fine, lengthy tannins.

Goes With: Spicy pork pizza, chèvre cendré (goats cheese rolled in ash), crispy duck leg with plum sauce, drinking and dancing on a warm, endless evening (but keep the wine chilled!)

Description

Winemaking: The 2019 vintage had low rainfall and above-average temperatures providing lower fruit yield, but a powerful fruit intensity.

  • A blend of King Valley Gamay (51%), and Yarra Valley Pinot Noir (49%)
  • 4 days of cold soaking followed by 7-10 days on skins
  • Hand plunged in open top fermenters
  • Gamay went through partial carbonic maceration
  • Short term maturation to retain bright, fresh flavours (in line with the French nouveau style)
  • Style: Bright, youthful and best lightly chilled
  • Best enjoyed within 2 years (no need to wait!)
