Serving
To enhance the enjoyment of Brown Brothers wines, we recommend the following regarding serving your wine:
Serving temperatures:
Sparkling (red, white & rose) 4.5°– 7.0°C (40-45°F)
White 7.0° - 10°C (45°-50°F)
Rose 10.0°-12.5°C (50°-55°F)
Medium bodied red 12.5° - 15.5°C (55°-60°F)
Full bodied reds 15.5°-18.0°C (60°-65°F)
There are a few wines unique to Brown Brothers that we recommend should be serve well chilled 4.5° – 7.0°C.

These wines are:
• Moscato,
• Cienna,
• Dolcetto & Syrah, and
• Tarrango.

Decanting:
Decanting is a step in serving wine that assists in separating any sediment that has formed in the bottle. While the sediment is harmless it can look unattractive in the glass and can be quite astringent in taste. It is fairly rare to need to decanter an everyday table wine as they have often been fined and filtered and will not throw off a sediment. However, it is usually required for ultra premium red wines that are designed to improve with age that have received no or minimal filtration.
In Brown Brothers range we recommend that you decant our Cellar Door red wines as these have received minimal fining and filtering.

So how do you decant wine:
1. Stand the bottle upright for 24 hours prior to opening.
2. Carefully open the bottle.
3. Find a strong light source to hold the bottle against (desk light, candle or flashlight)
4. Pour contents slowly into decanter – keep your eye on lower shoulder of bottle as this is where the sediment will build up.
5. Halt the decanting process when sediment starts to come out of the bottle.

TIP: If you want to extract the last remaining drops of wine from the bottle then filter the remaining wine through a paper coffee filter. Opening a bottle of sparkling wine: There is an enormous amount of pressure held under a sparkling wine cork. Therefore, it is important that care is taken when opening sparkling wine bottles.

To open a bottle of sparkling wine: 
1. Remove the foil from the neck of the bottle.
2. Point bottle away from self and others.
3. Place one hand over the wire cage to secure it in place, whilst opening it with the other hand.
4. Remove the wire cage from the bottle whilst ensuring you still have a firm hold over the cork.
5. Hold the cork in one hand and at the same time twist the base of the bottle with your other hand. Remember – twist the bottle not the cork.
